Simple Shrimp & Veggie Stir Fry

How was your weekend?

 

It was quiet here, with lots of rain.

 

When it rains… I stay inside. When I’ve been inside long enough, watched plenty of HGTV and caught up on my favorite blogs, it’s time to do something. Something productive.  Something like… try a new recipe.

 

Family was coming over for dinner Saturday night so I thought it would be perfect to try something new.

 

The result: Simple Shrimp & Veggie Stir Fry

Serves 6

Ingredients:

Olive oil cooking spray
1.5 lb jumbo shrimp
1 head broccoli
1 bunch asparagus, chopped
4 eggs, scrambled
1 tbsp sesame oil
1 tbsp freshly minced ginger
1 tbsp minced garlic
1 red onion, chopped or sliced
2 red bell peppers, sliced
4 medium zucchinis, spiralized

Sauce
1/2 cup soy sauce
2 tbsp honey
2 tbsp rice vinegar
1 tbsp toasted sesame seeds

Instructions:

1. Place a large skillet/wok over medium heat and spray with cooking spray. Add in the chopped broccoli and cook for 4-5 minutes, tossing frequently. {I personally like to have everything chopped & ready to go, because this dish cooks pretty fast!}

2. Scramble the eggs in a separate skillet while the broccoli cooks. Set aside.
3. In the wok, add in garlic, red onion, red bell pepper, asparagus, ginger and 1/2 tbsp of the sesame oil. Cook for 2-3 minutes.

4. While the wok continues to cook the vegetables, combine sauce ingredients & set aside.
5.  Add shrimp to the wok and let cook for 2-3 minutes. Add in the sauce mixture, zucchini noodles and scrambled egg. Toss to combine and stir for 2-3 more minutes.

6. Serve with quinoa or brown rice. Top with sesame seeds!

This is also a perfect post-workout dinner/lunch since it includes protein, good carbohydrates (add quinoa or brown rice) and lots of antioxidants for recovery.
